The Wine : De L’Orée 2004, Ermitage, white For 4 people Preparation time : 30 mins INGREDIENTS : 25g of fresh truffles, 70g of parsley (without stems), 1/2 shallot, 70g of butter, 1 egg yolk, Salt and pepper. For the ravioli pastry : 250g of flour 3 small eggs. Method : Mix the flour with 2 eggs, add an egg yolk and enough water to obtain a soft dough but firm enough to retain its shape.
